- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Combine ube puree, coconut oil, and granulated sugar in a large bowl and mix until smooth.
- Add eggs and vanilla extract, mixing until fully incorporated.
- Whisk together flour, baking powder, and salt in another bowl.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Fold in shredded coconut gently.
- Chill the dough in the refrigerator for about 30 minutes.
- Scoop tablespoon-sized portions and roll into balls.
- Roll each ball in powdered sugar to coat.
- Bake for 12 to 15 minutes until edges are set and centers remain soft.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
