Description

Ingredients

  • 1/2 cup coconut oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shredded coconut
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Combine ube puree, coconut oil, and granulated sugar in a large bowl and mix until smooth.
  3. Add eggs and vanilla extract, mixing until fully incorporated.
  4. Whisk together flour, baking powder, and salt in another bowl.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in shredded coconut gently.
  7. Chill the dough in the refrigerator for about 30 minutes.
  8. Scoop tablespoon-sized portions and roll into balls.
  9. Roll each ball in powdered sugar to coat.
  10. Bake for 12 to 15 minutes until edges are set and centers remain soft.
  11. Cool on the baking sheet for a few minutes before transferring to a wire rack.
