- 1 cup cottage cheese
- 2 cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 tablespoons honey or maple syrup
- 1/4 teaspoon salt
- 1/2 cup milk
- 2 large eggs
- 1/4 cup olive oil
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the cottage cheese, eggs, and milk. Mix until smooth.
- In another bowl, combine the whole wheat flour, baking powder, baking soda, and salt. Stir well.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Pour in the olive oil and honey (or maple syrup) and mix until incorporated.
- Transfer the batter to the greased loaf pan, spreading it evenly.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
