Description

A light and healthy twist on classic Bolognese made with zucchini noodles instead of pasta, offering comforting flavors without the heaviness.

Ingredients

Scale
  • 2 medium zucchinis
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Olive oil for cooking
  • Fresh basil for garnish

Instructions

  1. Spiralize the Zucchini: Use a spiralizer to turn the zucchinis into noodle-like strands and set aside.
  2. Sauté Onions and Garlic: Heat olive oil in a skillet, add onion and garlic, sauté until translucent.
  3. Cook the Ground Beef: Add ground beef to the skillet, cook until browned, then drain excess fat.
  4. Make the Sauce: Stir in crushed tomatoes, tomato paste, Italian seasoning, salt, and pepper, simmer for 15 minutes.
  5. Sauté the Zucchini Noodles: In a separate pan, sauté zucchini noodles for 2-3 minutes until tender.
  6. Serve and Garnish: Place zucchini noodles in a bowl, top with Bolognese sauce, and garnish with fresh basil.

Notes

Ensure to pat the zucchini dry to avoid a watery dish. Drain excess fat from the beef for a cleaner sauce.
