- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 cup milk
Instructions
- Preheat your oven to 375°F (190°C) and line your muffin tin with paper liners.
- Whisk together the flour, poppy seeds, baking powder, baking soda, and salt in a medium bowl.
- Cream the softened butter and sugar in a large bowl until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then stir in the lemon juice and zest.
- Alternate adding the dry ingredients and milk to the butter mixture, mixing gently to combine.
- Scoop the batter into muffin cups, filling them about two-thirds full.
- Bake for 18 to 20 minutes, until a toothpick comes out clean.
- Cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
