Description

A classic British comfort meal featuring thick pork sausages with creamy mashed potatoes and rich onion gravy.

Ingredients

Scale
  • 1/2 tbsp oil
  • 8 thick pork sausages of your choice
  • 1 1/2 tbsp unsalted butter, if needed
  • 1 large onion, halved and thinly sliced
  • 2 garlic cloves, minced
  • 3 tbsp all-purpose flour
  • 2 cups low-sodium beef broth
  • 1/4 tsp dark soy sauce or gravy browning
  • 1/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 lb Yukon Gold or russet potatoes, peeled and cut into chunks
  • 4 tbsp butter
  • 1/2 cup warm whole milk
  • Salt, to taste
  • Peas, steamed

Instructions

  1. Boil and mash the potatoes: Place the potato chunks in a large pot and cover them with cold salted water. Bring the pot to a boil, then cook the potatoes for 15 to 20 minutes, or until a knife slides in easily. Drain well, return to the pot, and mash with the butter and warm milk until smooth. Season with salt, then keep warm.
  2. Brown the sausages: Heat the oil in a large skillet over medium-high heat. Add the sausages and brown them on all sides, about 8 minutes. Move to a plate and lower the heat to medium.
  3. Build the onion base: Ensure about 2 tablespoons of fat remains in the pan. If less, add butter. Add sliced onion and minced garlic; cook for about 4 minutes until golden and soft.
  4. Make the gravy: Stir in the flour and cook for 1 minute. Add 3/4 cup broth and stir into a thick paste. Slowly add the rest of the broth, whisking out lumps. Add dark soy sauce.
  5. Simmer and season: Let the gravy simmer for 2-3 minutes, stirring often until thickened. Season with salt and pepper, taste, and adjust if needed.
  6. Serve and finish: Spoon the mashed potatoes onto plates, add 2 sausages to each serving, pour onion gravy over the top, and serve with steamed peas on the side.

Notes

Perfect for chilly nights or family dinners. Leftovers reheat well.
