Ingredients
Scale
- 1 lb ground beef
- 1 packet taco seasoning
- 3 cups lettuce, chopped
- 1 cup tomatoes, diced
- 1 cup cheddar cheese, shredded
- 1 cup black beans, drained and rinsed
- 1/2 cup corn, canned or frozen
- 1 avocado, sliced
- Tortilla chips, for serving
- Sour cream and salsa, for garnish
Instructions
- Brown the ground beef in a skillet over medium heat for 5-7 minutes until browned, breaking it up as it cooks.
- Drain any excess fat from the skillet.
- Add the taco seasoning to the cooked beef and follow the package instructions, usually adding a small amount of water and simmering.
- Prepare the salad base in a large bowl by combining lettuce, tomatoes, cheddar cheese, black beans, and corn.
- Toss the salad gently to distribute the ingredients evenly.
- Cool the beef slightly to prevent wilting the fresh ingredients.
- Assemble the salad by layering the cooled beef on top of the prepared salad.
- Serve with sliced avocado, tortilla chips, sour cream, and salsa on the side.
Notes
Substitute ground turkey or chicken for a leaner option; avoid adding hot beef directly to fresh vegetables.
