Description

A creamy and fluffy orange jello salad with mandarin oranges, crushed pineapple, and marshmallows that makes for a delightful and nostalgic dessert.


Ingredients

  • 1 box (3 ounces) orange flavored gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 can (15 ounces) mandarin oranges, drained well
  • 1 can (20 ounces) crushed pineapple in juice, drained well
  • 1 cup cottage cheese, small curd
  • 1 tub (8 ounces) whipped topping, thawed
  • 2 cups mini marshmallows
  • Optional: 1 teaspoon orange zest

Instructions

  1. Dissolve the gelatin by pouring it into a medium bowl, adding boiling water, and whisking until fully dissolved. Then add cold water and let it cool for 10 to 12 minutes.
  2. Chill the gelatin in the fridge for about 45 minutes until it thickens to a soft set.
  3. In a large mixing bowl, stir the cottage cheese and fold in the whipped topping until no streaks remain. Add mini marshmallows and optional orange zest.
  4. Pat the fruit dry and fold it into the creamy mixture. Add the soft set gelatin and mix gently to maintain airiness.
  5. Transfer to a serving bowl, smooth the top, and chill for at least 2 hours before serving.

Notes

Best served cold after chilling for at least 2 hours. Can be made ahead of time and stored in the refrigerator for up to 3 days.
