- 8 oz cheese tortellini
- 8 oz ribeye steak or roast beef, thinly sliced
- 1 onion, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup provolone or cheddar cheese, shredded
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the tortellini by bringing a pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Sauté sliced onions and green bell peppers for about 5 minutes, stirring occasionally until tender.
- Add minced garlic and cook for another minute. Then stir in ribeye or roast beef, cooking until heated through.
- Season with salt and pepper, then gently fold in the cooked tortellini.
- Top with cheese, reduce the heat, cover, and allow the cheese to melt before serving.
Notes
Watch out for overcooking the tortellini and adding garlic too early to ensure the best flavor.
