Description

Ingredients

  • 1 pre-made tart shell
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 3 large egg yolks
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 2 tablespoons butter
  • 3 egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine 1 cup sugar, 1/4 cup cornstarch, and 1/4 teaspoon salt in a saucepan, then gradually whisk in 1 1/2 cups water. Cook over medium heat, stirring constantly until thickened.
  3. Whisk together 3 egg yolks in a separate bowl. Slowly add a small amount of the hot mixture to the yolks, whisking constantly to temper them. Return to the saucepan and cook for 2 more minutes.
  4. Remove from heat, then stir in 2 tablespoons lemon juice, zest of 1 lemon, and 2 tablespoons butter.
  5. Pour the filling into the tart shell, smoothing it out evenly.
  6. Beat 3 egg whites with 1/4 teaspoon cream of tartar until soft peaks form. Gradually add 1 cup sugar, continuing to beat until stiff peaks form (about 5-6 minutes).
  7. Spoon the meringue over the tart filling, sealing the edges well.
  8. Bake for about 10 minutes or until the meringue is golden brown. Let cool before slicing to serve.

Notes

Store in the refrigerator for 3-4 days, covered loosely with plastic wrap. Can be frozen for up to 2 months; thaw in the refrigerator before serving.
