- 1 pre-made tart shell
- 1 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 1/2 cups water
- 3 large egg yolks
- 2 tablespoons lemon juice
- Zest of 1 lemon
- 2 tablespoons butter
- 3 egg whites
- 1/4 teaspoon cream of tartar
Instructions
- Preheat your oven to 350°F (175°C).
- Combine 1 cup sugar, 1/4 cup cornstarch, and 1/4 teaspoon salt in a saucepan, then gradually whisk in 1 1/2 cups water. Cook over medium heat, stirring constantly until thickened.
- Whisk together 3 egg yolks in a separate bowl. Slowly add a small amount of the hot mixture to the yolks, whisking constantly to temper them. Return to the saucepan and cook for 2 more minutes.
- Remove from heat, then stir in 2 tablespoons lemon juice, zest of 1 lemon, and 2 tablespoons butter.
- Pour the filling into the tart shell, smoothing it out evenly.
- Beat 3 egg whites with 1/4 teaspoon cream of tartar until soft peaks form. Gradually add 1 cup sugar, continuing to beat until stiff peaks form (about 5-6 minutes).
- Spoon the meringue over the tart filling, sealing the edges well.
- Bake for about 10 minutes or until the meringue is golden brown. Let cool before slicing to serve.
Notes
Store in the refrigerator for 3-4 days, covered loosely with plastic wrap. Can be frozen for up to 2 months; thaw in the refrigerator before serving.
