Ingredients

- 1 onion, chopped
- 3 cloves garlic, minced
- 2-inch piece of fresh ginger, grated
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 cups noodles (e.g., egg noodles or rice noodles)
- 2 carrots, sliced
- 2 stalks celery, sliced
- Salt and pepper to taste
- Fresh cilantro or green onions for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger, and sauté until fragrant, about 3-4 minutes.
- Add the chicken broth to the pot and bring it to a simmer.
- Stir in the shredded chicken, noodles, sliced carrots, and sliced celery, mixing well.
- Let the soup simmer for about 8 to 10 minutes until the noodles are cooked and vegetables are tender.
- Remove from heat and season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with fresh cilantro or green onions before serving.
