Description

Ingredients

  • 2-inch piece of fresh ginger, grated
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups noodles (e.g., egg noodles or rice noodles)
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger, and sauté until fragrant, about 3-4 minutes.
  2. Add the chicken broth to the pot and bring it to a simmer.
  3. Stir in the shredded chicken, noodles, sliced carrots, and sliced celery, mixing well.
  4. Let the soup simmer for about 8 to 10 minutes until the noodles are cooked and vegetables are tender.
