- 8 ounces macaroni
- 1 cup mayonnaise
- 1 teaspoon apple cider vinegar
- 1 tablespoon sugar
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/2 cup diced green onions
- 1/4 cup diced sweet pickle
- Salt and pepper to taste
Instructions
- Cook the macaroni by boiling water in a large pot. Once boiling, add the macaroni and cook according to the package instructions until al dente. After cooking, drain and rinse under cold water.
- Make the dressing by combining mayonnaise, apple cider vinegar, and sugar in a large bowl, whisking until well blended.
- Add the cooled macaroni to the bowl with the dressing.
- Mix well to ensure the macaroni and vegetables are coated.
- Season the salad with salt and pepper to taste, mixing again.
- Chill in the refrigerator for at least one hour before serving.
Notes
This salad can be made ahead of time for better flavor melding. Store in the refrigerator for up to 5 days or freeze for up to 2 months.
