- 1 lb mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tsp dried thyme
- 1 tsp paprika
- 4 cups vegetable broth
- 1 cup sour cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Melt butter in a large pot over medium heat. Add chopped onion and minced garlic, sautéing until softened.
- Add sliced mushrooms to the pot and cook until nicely browned for about 5 to 7 minutes.
- Stir in dried thyme and paprika, letting them cook with the mushrooms for about 1 minute.
- Pour in vegetable broth and bring to a simmer, cooking gently for about 15 minutes.
- Stir in sour cream and season with salt and pepper to taste.
- Garnish each bowl with fresh parsley before serving.
