Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 4 cups vegetable broth
  • 1 cup sour cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Melt butter in a large pot over medium heat. Add chopped onion and minced garlic, sautéing until softened.
  2. Add sliced mushrooms to the pot and cook until nicely browned for about 5 to 7 minutes.
  3. Stir in dried thyme and paprika, letting them cook with the mushrooms for about 1 minute.
  4. Pour in vegetable broth and bring to a simmer, cooking gently for about 15 minutes.
  5. Stir in sour cream and season with salt and pepper to taste.
  6. Garnish each bowl with fresh parsley before serving.
