Instructions
- Preheat your oven to 325°F (160°C). Mix graham cracker crumbs, 1/2 cup sugar, and melted butter in a bowl and press into a 9-inch springform pan.
- Beat the softened cream cheese until smooth, then add 1 cup sugar and vanilla extract until fully incorporated.
- Add eggs one at a time, beating on low speed until just blended; do not overbeat.
- Pour the creamy filling over the crust and bake for about 1 hour until the center is slightly jiggly.
- Cool the cheesecake to room temperature to prevent condensation.
- Chill in the refrigerator for at least 4 hours or overnight before serving. Optionally, spread sour cream on top before serving.
