A comforting dish of poached eggs in spiced tomato sauce, perfect for any meal.

- 2 tablespoons olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 can (28 ounces) crushed tomatoes
- Salt and pepper to taste
- 4–6 eggs
- Fresh cilantro or parsley for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Sauté the chopped onion and bell pepper until soft, about 5-7 minutes.
- Add the minced garlic, cumin, and paprika; cook for another 1-2 minutes until fragrant.
- Pour in the crushed tomatoes and season with salt and pepper; simmer for 10-15 minutes.
- Create small wells in the sauce and crack the eggs into each well; cover and cook for 5-8 minutes until eggs are set.
- Garnish with fresh cilantro or parsley before serving.
Notes
Serve with crusty bread or pita for scooping.
