Description

A comforting Southern Tomato Pie filled with juicy tomatoes, creamy mayonnaise, and a cheesy topping that delights the palate.


Ingredients

  • 68 ripe tomatoes, sliced
  • 1 pre-baked pie crust
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh basil, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Place the pre-baked pie crust on a baking sheet.
  2. Slice the tomatoes and layer them in the bottom of the prepared pie crust.
  3. Combine mayonnaise, shredded cheddar cheese, green onions, salt, black pepper, and basil in a bowl. Mix well.
  4. Spread the cheese mixture evenly over the tomatoes.
  5. Bake for 30-35 minutes until the top is bubbly and golden brown.
  6. Let the pie cool for a few minutes before slicing.

Notes

Chill for a few minutes after baking for easier slicing. Store leftovers in the refrigerator for up to 3 days.
