Description

A comforting dish combining tender chicken with a rich, creamy garlic sauce, sun-dried tomatoes, and fresh spinach.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a large skillet.
  2. Add olive oil to the skillet over medium heat. Season chicken breasts with salt and pepper, then sear for 6-7 minutes on each side until golden brown. Remove and set aside.
  3. Add minced garlic to the skillet and sauté for 1 minute. Stir in sun-dried tomatoes, heavy cream, chicken broth, Parmesan cheese, and Italian seasoning. Let simmer for a few minutes.
  4. Stir in fresh spinach until wilted, then return seared chicken to the skillet and coat with sauce.
  5. Transfer the skillet to the oven and bake for 25-30 minutes until the chicken is cooked through.
  6. Serve hot, optionally topped with extra grated Parmesan cheese.
