- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and prepare a large skillet.
- Add olive oil to the skillet over medium heat. Season chicken breasts with salt and pepper, then sear for 6-7 minutes on each side until golden brown. Remove and set aside.
- Add minced garlic to the skillet and sauté for 1 minute. Stir in sun-dried tomatoes, heavy cream, chicken broth, Parmesan cheese, and Italian seasoning. Let simmer for a few minutes.
- Stir in fresh spinach until wilted, then return seared chicken to the skillet and coat with sauce.
- Transfer the skillet to the oven and bake for 25-30 minutes until the chicken is cooked through.
- Serve hot, optionally topped with extra grated Parmesan cheese.
