- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded cheese (e.g., cheddar or mozzarella)
- 1/2 cup breadcrumbs
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 teaspoon thyme
Instructions
- Preheat your oven to 375°F (190°C) and grease your casserole dish with olive oil.
- In a skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic; sauté until fragrant and translucent (about 3-4 minutes).
- In a large mixing bowl, combine the sautéed onions and garlic with the mixed winter vegetables, heavy cream, half of the shredded cheese, thyme, and salt and pepper. Mix well.
- Pour the mixture into the greased casserole dish, spreading it evenly.
- Sprinkle breadcrumbs on top, followed by the remaining shredded cheese.
- Bake in the preheated oven for about 25-30 minutes until golden and bubbling.
- Let the casserole cool for a few minutes before serving.
