Ingredients

  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • 1/2 cup breadcrumbs
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon thyme

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your casserole dish with olive oil.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic; sauté until fragrant and translucent (about 3-4 minutes).
  3. In a large mixing bowl, combine the sautéed onions and garlic with the mixed winter vegetables, heavy cream, half of the shredded cheese, thyme, and salt and pepper. Mix well.
  4. Pour the mixture into the greased casserole dish, spreading it evenly.
  5. Sprinkle breadcrumbs on top, followed by the remaining shredded cheese.
  6. Bake in the preheated oven for about 25-30 minutes until golden and bubbling.
  7. Let the casserole cool for a few minutes before serving.
