- 4 medium sweet potatoes
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup cooked quinoa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Optional toppings: avocado, salsa, cheese, cilantro
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the sweet potatoes by cutting off the tops and scooping out some of the insides.
- Bake the hollowed sweet potatoes for 30-40 minutes until tender.
- Make the filling by combining black beans, corn, quinoa, cumin, chili powder, salt, and pepper in a bowl.
- Stuff the sweet potatoes with the filling and carve jack-o-lantern faces if desired.
- Return the stuffed sweet potatoes to the oven for an additional 10 minutes to meld flavors.
Notes
