Description

A festive Halloween dinner featuring sweet potatoes stuffed with a hearty filling of black beans, corn, and quinoa, decorated like jack-o-lanterns for a fun and comforting meal.


Ingredients

  • 4 medium sweet potatoes
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cooked quinoa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: avocado, salsa, cheese, cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the sweet potatoes by cutting off the tops and scooping out some of the insides.
  3. Bake the hollowed sweet potatoes for 30-40 minutes until tender.
  4. Make the filling by combining black beans, corn, quinoa, cumin, chili powder, salt, and pepper in a bowl.
  5. Stuff the sweet potatoes with the filling and carve jack-o-lantern faces if desired.
  6. Return the stuffed sweet potatoes to the oven for an additional 10 minutes to meld flavors.
