Description

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cooking spray or oil for baking

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Combine flour, garlic powder, salt, and black pepper in a shallow bowl.
  3. Beat the large eggs in another bowl until well mixed.
  4. Mix shredded coconut and panko breadcrumbs in a third bowl.
  5. Dip each shrimp into the flour mixture, then into the eggs, and finally coat with the coconut-panko blend.
  6. Bake the shrimp for 15-20 minutes until cooked through and golden.
  7. Serve warm with a dipping sauce of your choice.
