- 2 pounds baby potatoes
- 2 tablespoons olive oil
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat your oven to 450°F (230°C).
- Rinse the baby potatoes under cold water.
- Boil the potatoes in a pot of salted water for 15-20 minutes until fork-tender.
- Drain the potatoes and allow to cool slightly.
- Toss the potatoes with olive oil until evenly coated.
- Smash each potato gently with a fork or potato masher.
- Sprinkle minced garlic and grated Parmesan over the smashed potatoes.
- Season with salt and pepper to taste.
- Bake in the oven for 25-30 minutes until golden-brown and crispy.
- Garnish with chopped parsley before serving.
