- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon

- 1/2 cup vegetable oil
- 2 large eggs
- 2 cups grated carrots
- 1/2 cup chopped walnuts (optional)
- 1/2 cup raisins (optional)
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- Whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg in a mixing bowl.
- Combine the vegetable oil and eggs in another bowl and whisk until well combined.
- Stir in the grated carrots, and the optional chopped walnuts and raisins.
- Add the wet mixture to the dry ingredients, stirring until just combined.
- Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Beat the softened cream cheese and butter together until creamy, then mix in the powdered sugar and vanilla until smooth.
- Frost the cooled bars with the cream cheese frosting, cut into squares, and serve.
Notes
Store in an airtight container in the refrigerator for 4-5 days or freeze for up to 3 months.
