Description

Ingredients

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg in a mixing bowl.
  3. Combine the vegetable oil and eggs in another bowl and whisk until well combined.
  4. Stir in the grated carrots, and the optional chopped walnuts and raisins.
  5. Add the wet mixture to the dry ingredients, stirring until just combined.
  6. Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Beat the softened cream cheese and butter together until creamy, then mix in the powdered sugar and vanilla until smooth.
  8. Frost the cooled bars with the cream cheese frosting, cut into squares, and serve.
