Instructions
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing and flouring it.
- Combine the grated zucchini, sour cream, sugar, vegetable oil, eggs, and vanilla extract in a large bowl. Mix until smooth.
- Sift together the flour, baking soda, baking powder, salt, and cinnamon in another bowl.
- Add the dry ingredients to the wet mixture gradually, stirring until just combined. If desired, fold in any optional nuts or chocolate chips.
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake for approximately 50-60 minutes, checking for doneness with a toothpick.
- Cool the bread in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
