Description

A festive and easy dessert that combines the joy of cookies and cake, decorated with colorful candies and frosting.


Ingredients

  • Unsalted butter: 3/4 cup (170 g), softened
  • Granulated sugar: 3/4 cup (150 g)
  • Egg: 1 whole
  • Egg yolk: 1 extra
  • Vanilla extract: 2 teaspoons
  • All-purpose flour: 2 cups (240 g)
  • Baking powder: 1 teaspoon
  • Baking soda: 1/4 teaspoon
  • Salt: 1/2 teaspoon
  • Mix-ins (pastel candies or chocolate chips): 1 cup
  • Frosting (optional, vanilla buttercream or cream cheese): for decorating

Instructions

  1. Preheat the oven to 350°F (175°C). Grease the pan and line the bottom with parchment.
  2. Beat butter and sugar until light and fluffy. Add egg, extra yolk, and vanilla, mixing until smooth.
  3. Whisk together flour, baking powder, baking soda, and salt. Stir dry mixture into wet mixture until just combined.
  4. Fold in chocolate chips or pastel candies, reserving some for topping.
  5. Press the dough evenly into the prepared pan and scatter reserved candies on top.
  6. Bake for 18-24 minutes until edges are set and lightly golden, with a soft center.
  7. Cool in the pan for 20 minutes, then remove and cool completely on a wire rack.
  8. Once cool, frost the border and add any additional decorations.

Notes

For best results, do not overmix the dough and watch the baking time closely. A slightly underbaked center gives the cookie a chewy texture.
