Ingredients
- Unsalted butter: 3/4 cup (170 g), softened
- Granulated sugar: 3/4 cup (150 g)
- Egg: 1 whole
- Egg yolk: 1 extra
- Vanilla extract: 2 teaspoons
- All-purpose flour: 2 cups (240 g)
- Baking powder: 1 teaspoon
- Baking soda: 1/4 teaspoon
- Salt: 1/2 teaspoon
- Mix-ins (pastel candies or chocolate chips): 1 cup
- Frosting (optional, vanilla buttercream or cream cheese): for decorating
Instructions
- Preheat the oven to 350°F (175°C). Grease the pan and line the bottom with parchment.
- Beat butter and sugar until light and fluffy. Add egg, extra yolk, and vanilla, mixing until smooth.
- Whisk together flour, baking powder, baking soda, and salt. Stir dry mixture into wet mixture until just combined.
- Fold in chocolate chips or pastel candies, reserving some for topping.
- Press the dough evenly into the prepared pan and scatter reserved candies on top.
- Bake for 18-24 minutes until edges are set and lightly golden, with a soft center.
- Cool in the pan for 20 minutes, then remove and cool completely on a wire rack.
- Once cool, frost the border and add any additional decorations.
Notes
For best results, do not overmix the dough and watch the baking time closely. A slightly underbaked center gives the cookie a chewy texture.
