Instructions
- Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners.
- Mix together the apple butter, sugar, vegetable oil, eggs, and vanilla extract until smooth.
- Whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, stirring gently. If desired, fold in chopped apples and nuts.
- Fill each muffin cup about 3/4 full with the batter.
- Bake for 18-20 minutes, checking for doneness with a toothpick.
- Allow to cool in the pan for a few minutes before transferring to a wire rack.
