Instructions
- Preheat your oven to 400°F (200°C).
- Slice the smoked sausage into bite-sized pieces.
- Chop the bell peppers, zucchini, and red onion into similar-sized pieces.
- Combine the sausage and veggies in a large bowl with olive oil, garlic powder, salt, and pepper, and toss to coat.
- Spread the mixture evenly on a sheet pan.
- Roast in the oven for 20-25 minutes, stirring halfway through.
