Description

A delightful baked dessert that blends fresh apricots with a light custard-like batter, perfect for summer.


Ingredients

  • 1 1/2 cups fresh apricots, pitted and halved
  • 1 cup milk
  • 3 large eggs
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup sliced almonds
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a pie dish or an oven-safe skillet.
  2. Arrange the apricot halves evenly across the bottom of the prepared dish.
  3. Combine the milk, eggs, sugar, and vanilla extract in a mixing bowl and whisk until smooth.
  4. Add the flour and salt gradually, whisking until the mixture is lump-free.
  5. Pour the batter over the arranged apricots and sprinkle with sliced almonds.
  6. Bake for 35-40 minutes until puffed and golden. Allow to cool slightly before dusting with powdered sugar.

Notes

For best results, allow the clafoutis to cool slightly before slicing to help it set. Dust with powdered sugar right before serving.
