- 2 ripe bananas, mashed
- 1 cup strawberries, chopped
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- 1–2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Add the mashed bananas and melted butter in a mixing bowl, mixing until creamy.
- Stir in baking soda and salt, then add sugar, followed by beaten egg and vanilla extract, mixing well.
- Fold in flour until just combined; avoid overmixing.
- Gently incorporate the chopped strawberries into the batter.
- Pour the batter into the greased loaf pan and bake for 60-65 minutes until a toothpick comes out clean.
- While the bread cools, beat together cream cheese, powdered sugar, and milk until smooth.
- Drizzle the glaze over the cooled bread, slice, and serve.
