Description

A comforting dish of tender Greek chicken meatballs served atop zesty lemon orzo, perfect for any occasion.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice of 1 lemon
  • Olive oil for cooking

Instructions

  1. Mix the ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, oregano, salt, and pepper in a bowl.
  2. Shape the mixture into balls, about 1 inch in diameter.
  3. Cook the meatballs in hot olive oil over medium heat until browned and fully cooked, about 10-15 minutes.
  4. Prepare the orzo by boiling it in chicken broth, cooking according to package instructions, about 8-10 minutes.
  5. Add the lemon juice to the cooked orzo and mix well.
  6. Serve the lemon orzo topped with the meatballs, garnished with parsley.
