Ingredients

- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 egg
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup orzo pasta
- 2 cups chicken broth
- Juice of 1 lemon
- Olive oil for cooking
Instructions
- Mix the ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, oregano, salt, and pepper in a bowl.
- Shape the mixture into balls, about 1 inch in diameter.
- Cook the meatballs in hot olive oil over medium heat until browned and fully cooked, about 10-15 minutes.
- Prepare the orzo by boiling it in chicken broth, cooking according to package instructions, about 8-10 minutes.
- Add the lemon juice to the cooked orzo and mix well.
- Serve the lemon orzo topped with the meatballs, garnished with parsley.
Notes
