Description

A cozy summer dinner that combines ground beef and fresh zucchini for a hearty yet light casserole.


Ingredients

  • 1 pound lean ground beef
  • 3 medium zucchinis, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes or marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese (optional)
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat until no longer pink, add onion and garlic.
  3. Add the diced tomatoes or marinara sauce, season with salt, pepper, and Italian seasoning.
  4. Layer the zucchini in a greased 9×13 baking dish.
  5. Spread the beef mixture over zucchini layers.
  6. Top with mozzarella and cheddar cheese.
  7. Bake in the oven for 25-35 minutes or until bubbly and golden on top.
  8. Let it rest for 10 minutes before slicing and serving.

Notes

Use a lean ground beef to prevent greasiness, and be sure to prep the zucchini properly to avoid excess water.
