- 1 pound lean ground beef
- 3 medium zucchinis, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes or marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese (optional)
- Salt, to taste
- Pepper, to taste
- 1 tablespoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Brown the ground beef in a skillet over medium heat until no longer pink, add onion and garlic.
- Add the diced tomatoes or marinara sauce, season with salt, pepper, and Italian seasoning.
- Layer the zucchini in a greased 9×13 baking dish.
- Spread the beef mixture over zucchini layers.
- Top with mozzarella and cheddar cheese.
- Bake in the oven for 25-35 minutes or until bubbly and golden on top.
- Let it rest for 10 minutes before slicing and serving.
Notes
Use a lean ground beef to prevent greasiness, and be sure to prep the zucchini properly to avoid excess water.
