Ingredients

- 4 to 6 medium carrots
- 1 to 2 tablespoons honey (or maple syrup)
- zest and juice of 1 large lime (or 2 small limes)
- 1 tablespoon olive oil
- a pinch of salt
- black pepper (optional)
- sliced almonds, sesame seeds, or chopped peanuts (for crunch)
- fresh herbs (cilantro or mint, optional)
Instructions
- Wash and peel your carrots.
- Use the peeler to shave long ribbons, rotating the carrot as you go.
- In a small bowl, whisk together honey, lime juice, lime zest, olive oil, salt, and pepper.
- Pour the dressing over the carrot ribbons and toss gently.
- Let it sit for 10 minutes to allow the flavors to meld.
- Top with your choice of nuts or seeds and herbs, if desired.
Notes
For maximum crunch, store the ribbons and dressing separately and mix just before serving.
