Description

A refreshing and crunchy carrot salad with a tangy honey lime dressing, perfect for quick meals or as a side dish.


Ingredients

  • 4 to 6 medium carrots
  • 1 to 2 tablespoons honey (or maple syrup)
  • zest and juice of 1 large lime (or 2 small limes)
  • 1 tablespoon olive oil
  • a pinch of salt
  • black pepper (optional)
  • sliced almonds, sesame seeds, or chopped peanuts (for crunch)
  • fresh herbs (cilantro or mint, optional)

Instructions

  1. Wash and peel your carrots.
  2. Use the peeler to shave long ribbons, rotating the carrot as you go.
  3. In a small bowl, whisk together honey, lime juice, lime zest, olive oil, salt, and pepper.
  4. Pour the dressing over the carrot ribbons and toss gently.
  5. Let it sit for 10 minutes to allow the flavors to meld.
  6. Top with your choice of nuts or seeds and herbs, if desired.
