- 2 cups grated zucchini
- 2 ripe bananas, mashed
- 1 cup whole wheat flour
- 1/2 cup oats
- 1/2 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a loaf pan.
- Combine the grated zucchini, mashed bananas, honey, and applesauce in a bowl.
- Mix the whole wheat flour, oats, baking soda, cinnamon, and salt in another bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped nuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-55 minutes until a toothpick comes out clean.
- Cool the loaf in the pan for 10 minutes, then transfer to a wire rack.
Notes
For best results, use fresh zucchini and avoid overmixing the batter.
