Description

Ingredients

  • 2 cups fresh green beans, trimmed
  • 2 cups fresh mushrooms, sliced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup low-sodium vegetable broth
  • 1 cup milk (dairy or non-dairy)
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup crispy fried onions (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a skillet.
  2. Sauté the onions and garlic in olive oil for 3-4 minutes until softened.
  3. Brown the mushrooms in the skillet for 5-7 minutes, stirring occasionally.
  4. Mix in the green beans, vegetable broth, milk, thyme, and season with salt and pepper.
  5. Transfer the mixture to a baking dish and top with crispy fried onions if desired.
  6. Bake for 25-30 minutes until bubbly and golden on top.
