Ingredients

- 2 cups fresh green beans, trimmed
- 2 cups fresh mushrooms, sliced
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup low-sodium vegetable broth
- 1 cup milk (dairy or non-dairy)
- 1 tablespoon olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup crispy fried onions (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a skillet.
- Sauté the onions and garlic in olive oil for 3-4 minutes until softened.
- Brown the mushrooms in the skillet for 5-7 minutes, stirring occasionally.
- Mix in the green beans, vegetable broth, milk, thyme, and season with salt and pepper.
- Transfer the mixture to a baking dish and top with crispy fried onions if desired.
- Bake for 25-30 minutes until bubbly and golden on top.
