Description

Healthy Grilled Chicken and Vegetable Kabobs are a colorful and fun dinner option that cooks everything together for a fresh and light meal.


Ingredients

  • Chicken breast or chicken thighs, cut into 1 to 1.5 inch pieces
  • Bell peppers (any colors), cut into chunky squares
  • Zucchini or yellow squash, sliced into thick half moons
  • Red onion, cut into wedges
  • Cherry tomatoes (optional)
  • Skewers (metal or wooden)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 to 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Soak wooden skewers in water for 30 minutes if using.
  2. Toss the chicken with the marinade in a bowl or zip bag and refrigerate while you prep the vegetables.
  3. Preheat your grill to medium high heat and clean the grates.
  4. Thread chicken and vegetables onto skewers, alternating for a good mix.
  5. Grill for 10 to 14 minutes, turning every few minutes, until chicken is cooked through.
  6. Let the kabobs rest for 3 minutes, then serve.
