Instructions

- Prepare the quinoa and vegetables: In a large bowl, combine the cooked quinoa with the halved cherry tomatoes, diced cucumber, diced red onion, and sliced Kalamata olives.
- Make the dressing: In a small bowl, whisk together the olive oil and lemon juice.
- Combine the ingredients: Drizzle the dressing over the quinoa mixture and toss everything to combine. Gently fold in the cooked turkey and crumbled feta cheese.
- Garnish and serve: Before serving, garnish with fresh parsley.
