- 2 cups almond milk (or any milk of choice)
- 1 cup mixed berries (fresh or frozen)
- 1/4 cup maple syrup (or honey)
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup chopped nuts (optional)
- 1 tablespoon chia seeds (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray or butter.
- Combine the rolled oats, baking powder, cinnamon, and salt in a large bowl.
- Mix the almond milk, maple syrup, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and stir to combine.
- Fold in the mixed berries and chopped nuts gently.
- Pour the mixture into the greased baking dish and bake for about 30-35 minutes until golden brown and set.
- Allow to cool slightly before serving warm.
Notes
Store in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat with a splash of almond milk to keep it moist.
