Description

Ingredients

  • 1 cup sweet corn (fresh or canned)
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Feta cheese, for topping (optional)

Instructions

  1. Cook the pasta according to the package instructions. Once it reaches al dente, drain it in a colander and let it cool.
  2. Combine the cooled pasta, sweet corn, diced red bell pepper, finely chopped red onion, diced avocado, and chopped cilantro in a large mixing bowl. Stir gently to combine.
  3. Make the dressing by whisking together the fresh lime juice, olive oil, salt, and pepper in a small bowl.
  4. Dress the salad by pouring the dressing over the pasta salad mixture and tossing gently until everything is evenly coated.
