- 4 medium to large zucchini, sliced lengthwise
- 1 pound ground beef (lean)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup marinara or crushed tomatoes
- Salt, to taste
- Pepper, to taste
- 1 teaspoon Italian seasoning
- Pinch of chili flakes (optional)
- 1 cup shredded mozzarella cheese
- Olive oil, for cooking
Instructions
- Heat your oven to 400°F (200°C). Grab a baking dish or sheet pan and lightly oil it to prevent sticking.
- Prep the zucchini: Slice each zucchini lengthwise and scoop out the center, leaving a little border. Lightly salt the zucchini halves and let them sit.
- Cook the beef mixture: In a skillet, add olive oil and sauté the onion for a few minutes. Add garlic and ground beef, cook until no longer pink. Stir in chopped zucchini flesh, marinara, and seasonings. Simmer for 3-5 minutes.
- Fill the boats: Pat the zucchini halves dry and spoon the beef mixture into each half.
- Bake covered with foil for about 20 minutes. Remove the foil, sprinkle cheese on top, and bake for another 8-10 minutes until zucchini is tender and cheese is melted.
- Rest for a couple of minutes before serving to allow the filling to set.
Notes
For extra flavor, consider adding fresh herbs as a topping or using different cheeses. Ensure zucchini is salted to prevent excess moisture.
