- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 large head cauliflower, riced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 can diced tomatoes (14.5 oz)
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Add olive oil to a skillet and heat it over medium.
- Throw in the chopped onion and garlic, sautéing for 3-5 minutes.
- Add the ground beef and cook until browned, then drain excess fat.
- Stir in the diced tomatoes, cauliflower rice, Italian seasoning, salt, and pepper until well combined.
- Transfer the mixture to a greased baking dish, spreading evenly.
- Sprinkle shredded cheese over the top.
- Bake for 25-30 minutes until cheese is melted and bubbly.
- Garnish with fresh parsley before serving warm.
