Description

A comforting toast topped with homemade mixed berry chia seed jam, perfect for breakfast or snack.


Ingredients

  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tablespoons chia seeds
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice
  • 4 slices of bread
  • Butter or oil for toasting

Instructions

  1. Heat the mixed berries in a medium saucepan over medium heat, stirring occasionally until they soften, about 5 minutes.
  2. Add the chia seeds, honey (or maple syrup), and lemon juice. Mix thoroughly.
  3. Continue to cook for another 5-10 minutes until the jam thickens to your desired consistency.
  4. Cool the jam at room temperature for 10-15 minutes after removing from heat.
  5. Transfer the cooled jam into a clean jar and seal tightly. Refrigerate for up to one week.
  6. Toast the slices of bread and spread a generous layer of jam over each slice.
  7. Top with additional berries or nuts if desired.

Notes

Store the jam in an airtight jar in the refrigerator for up to one week. It can also be frozen for up to three months.
