- 1 cup pumpkin puree
- 1 cup brown sugar
- 1/2 cup vegetable oil
- 1 egg
- 2 cups flour
- 2 tsp pumpkin pie spice
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 4 oz cream cheese
- 4 tbsp butter
- 2 cups powdered sugar
- 2 tbsp maple syrup
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix in a large bowl the pumpkin puree, brown sugar, vegetable oil, and egg until smooth.
- Combine in a separate bowl the flour, pumpkin pie spice, baking powder, baking soda, and salt.
- Fold the dry mixture into the wet mixture until just blended.
- Scoop rounded mounds of batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until set but soft. Let cool completely on a wire rack.
- Make the filling by beating together cream cheese, butter, powdered sugar, and maple syrup until fluffy.
- Assemble the whoopie pies by spreading the filling on the flat side of one cookie and sandwiching it with another cookie.
