Description

A delightful combination of sweet and savory, these moist muffins are perfect for cozy mornings or afternoon treats.

Ingredients

Scale
  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup chocolate chips
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the vegetable oil, sugar, brown sugar, eggs, and vanilla extract in a large bowl and whisk until smooth.
  3. Fold in the grated zucchini.
  4. Whisk together the flour, baking soda, baking powder, salt, and cinnamon in a separate bowl.
  5. Add the dry mixture to the wet mixture and stir until just combined.
  6. Gently fold in the chocolate chips.
  7. Distribute the batter evenly among the muffin cups, filling each about two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

For best results, ensure to squeeze out any excess moisture from the grated zucchini.
