Description

Delicious quick bread infused with the sweetness of cantaloupe and warm spices.


Ingredients

  • 1 teaspoon ground cinnamon

  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pureed cantaloupe
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl.
  3. Whisk together the wet ingredients: sugar, oil, egg, vanilla extract, and pureed cantaloupe in another bowl.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
