- 2/3 cup sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 2 egg whites
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
- Combine the shredded coconut, sugar, flour, and salt in a large mixing bowl.
- Whisk the egg whites in another bowl until frothy.
- Fold the frothy egg whites into the coconut mixture and add vanilla extract.
- Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them apart.
- Bake for 20-25 minutes or until golden brown, then cool before serving.
Notes
For added flavor, consider mixing in chocolate chips or nuts. Store in an airtight container in the fridge for up to 1 week.
