Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Whisk together sugar, oil, eggs, and vanilla in a large bowl until combined.
- Add the grated zucchini to the wet mixture and stir gently.
- Mix flour, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
- Gradually add dry ingredients to wet mixture, mixing until just combined.
- Fold in optional nuts if using, then pour batter into the prepared loaf pan.
- Bake for 50-60 minutes, checking doneness with a toothpick.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
