Description

Ingredients

  • 1 cup brown sugar
  • 1/2 cup chopped pecans
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda

  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together the all-purpose flour, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix together the buttermilk, vegetable oil, egg, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
  5. Fold in the chopped pecans.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.

Notes

For a nut-free version, simply omit the pecans. Store in an airtight container for up to 3 days at room temperature.
