- 1 large egg

Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, whisk together the all-purpose flour, brown sugar, baking powder, baking soda, and salt.
- In another bowl, mix together the buttermilk, vegetable oil, egg, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
- Fold in the chopped pecans.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the muffins cool for a few minutes in the tin before transferring to a wire rack to cool completely.
Notes
For a nut-free version, simply omit the pecans. Store in an airtight container for up to 3 days at room temperature.
