- 1 small cucumber (or half of a large one)
- 2 limes (one for juice, one for wedges)
- 1 to 2 teaspoons honey or simple syrup (optional)
- Sparking water (plain or flavored)
- Ice
- Pinch of salt (optional)
- Fresh mint (optional)
Instructions
- Wash your cucumber and cut off the ends. Slice a few thin rounds for garnish if you want. Then roughly chop the rest.
- In a glass or a small bowl, muddle or mash the chopped cucumber with lime juice.
- Stir in your honey or simple syrup if using. Add a tiny pinch of salt if desired.
- Fill your glass with ice. Strain the cucumber lime mix into the glass if you do not want bits.
- Top with sparkling water and give it a gentle stir. Add mint and cucumber slices, then taste.
Notes
The mocktail tastes best right after it’s made. For a smoother drink, blend the cucumber with lime juice and strain.
