Description

A delightful salad featuring roasted carrots, creamy goat cheese, and crunchy walnuts, dressed with honey and balsamic vinegar.


Ingredients

Scale
  • 4 large carrots
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup walnuts, toasted
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the carrots and cut them into matchstick-sized pieces.
  3. Toss the cut carrots with olive oil, salt, and pepper.
  4. Spread the seasoned carrots onto a baking sheet in a single layer.
  5. Roast for about 25-30 minutes, stirring halfway through.
  6. Add mixed greens to a large bowl and set aside.
  7. Once the carrots are roasted, mix them with the greens and add crumbled goat cheese and toasted walnuts.
  8. Whisk together balsamic vinegar and honey, then drizzle over the salad and toss gently.
  9. Serve immediately to enjoy fresh flavors.
