- 4 large carrots
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 cups mixed greens
- 1/2 cup goat cheese, crumbled
- 1/4 cup walnuts, toasted
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
Instructions
- Preheat your oven to 400°F (200°C).
- Peel the carrots and cut them into matchstick-sized pieces.
- Toss the cut carrots with olive oil, salt, and pepper.
- Spread the seasoned carrots onto a baking sheet in a single layer.
- Roast for about 25-30 minutes, stirring halfway through.
- Add mixed greens to a large bowl and set aside.
- Once the carrots are roasted, mix them with the greens and add crumbled goat cheese and toasted walnuts.
- Whisk together balsamic vinegar and honey, then drizzle over the salad and toss gently.
- Serve immediately to enjoy fresh flavors.
Notes
Store leftovers in the fridge for up to three days. Do not freeze, as the texture will change.
