- 2 pounds sweet potatoes
- 4 tablespoons butter
- 1 teaspoon cinnamon
- 2 tablespoons brown sugar
- 1 teaspoon salt
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- Peel the sweet potatoes and cut them into 1-inch cubes.
- Toss the sweet potatoes in a mixing bowl with olive oil, salt, and cinnamon until coated.
- Spread the seasoned sweet potatoes on the prepared baking sheet in a single layer.
- Roast for 25-30 minutes, turning halfway through until tender and caramelized.
- Melt the butter in a saucepan over low heat and stir in brown sugar and additional cinnamon.
- Drizzle the warm cinnamon butter over the roasted sweet potatoes before serving.
