Description

Ingredients

  • 2 pounds sweet potatoes
  • 4 tablespoons butter
  • 1 teaspoon cinnamon
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Peel the sweet potatoes and cut them into 1-inch cubes.
  3. Toss the sweet potatoes in a mixing bowl with olive oil, salt, and cinnamon until coated.
  4. Spread the seasoned sweet potatoes on the prepared baking sheet in a single layer.
  5. Roast for 25-30 minutes, turning halfway through until tender and caramelized.
  6. Melt the butter in a saucepan over low heat and stir in brown sugar and additional cinnamon.
  7. Drizzle the warm cinnamon butter over the roasted sweet potatoes before serving.

Notes
