Description

A quick and comforting one-pan meal combining seasoned ground beef, rice, beans, and vegetables for a satisfying dinner.


Ingredients

  • 1 lb ground beef
  • 1 cup uncooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup beef broth
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Brown the ground beef in a large skillet over medium heat until browned, breaking it apart with a spatula. Drain excess fat.
  2. Sauté the chopped onion, bell pepper, and minced garlic until the onions become translucent and the bell pepper softens, about 5 minutes.
  3. Add the chili powder, cumin, and a pinch of salt and pepper. Mix well and let it toast slightly for about 1 minute.
  4. Incorporate the uncooked rice, drained black beans, diced tomatoes, and beef broth. Stir until well combined.
  5. Simmer the mixture by bringing it to a boil, then reducing the heat to low, covering, and letting it simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
  6. Fluff the rice with a fork and garnish generously with fresh cilantro before serving.

Notes

Customize with ground turkey or chicken for a lighter option, or use lentils for a vegetarian version.
